Keep the existing windows and add more if possible, no new counter space, add a breakfast nook, a new area with benches and a table on the right side, keep the same lights and the same wall on the left and front, and push the right hand wall out to make the breakfast nook. Also the breakfast nook should connect to a new balcony which would be located behind the existing wall on the right.
