Chicken biryani is a flavorful and delicious Indian dish made with long-grain rice, tender chicken, aromatic spices, and herbs. Here's a recipe to make chicken biryani at home:

Ingredients:

2 cups of Basmati rice
1 lb boneless, skinless chicken thighs
2 onions, thinly sliced
3-4 garlic cloves, minced
1 tablespoon ginger, minced
1 tomato, chopped
1 cup plain yogurt
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon garam masala
1 teaspoon turmeric
1/2 teaspoon cayenne pepper
2 bay leaves
4 cardamom pods
4 whole cloves
1 cinnamon stick
Salt to taste
3 tablespoons ghee (clarified butter) or vegetable oil
1/4 cup cilantro, chopped
1/4 cup mint leaves, chopped
1/2 lemon
Instructions:

Rinse the rice thoroughly in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
Cut the chicken into bite-size pieces and marinate with yogurt, cumin powder, coriander powder, garam masala, turmeric, cayenne pepper, and salt for at least 30 minutes.
Heat 3 tablespoons of ghee or oil in a large pot over medium-high heat. Add the bay leaves, cardamom pods, cloves, and cinnamon stick and cook until fragrant, about 30 seconds.
Add the sliced onions and cook until they are golden brown, about 8-10 minutes.
Add the minced garlic and ginger and cook for another minute.
Add the chopped tomato and cook until it turns soft and mushy, about 5 minutes.
Add the marinated chicken to the pot and cook until it is no longer pink, about 10-12 minutes.
Drain the rice and add it to the pot with the chicken. Add enough water to cover the rice by about an inch.
Bring the mixture to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid. Cook for 15-20 minutes or until the rice is tender and the water has been absorbed.
Remove the pot from heat and let it rest for 5-10 minutes.
Fluff the rice with a fork and add the chopped cilantro and mint leaves. Squeeze the lemon over the top.
Serve hot with raita (yogurt and cucumber dip) or a side of your choice. Enjoy your delicious homemade chicken biryani!
