1 Snipper de uien en snijd de knoflook fijn.
2 Verhit de olie in een hapjespan op hoog vuur en bak de zalm 2 min. Keer halverwege. De zalm hoeft niet gaar te zijn. Schep de zalm op een bord en laat staan tot gebruik.
3 Voeg de ui, knoflook en rijst toe aan dezelfde pan en bak 3 min. Schep regelmatig om.
4 Roer de ontdooide spinazie en de zuivelspread erdoor. Breng op smaak met peper en eventueel zout. Schenk er het water bij, breng aan de kook en roer door. Kook de rijst in 15-18 min. op laag vuur met de deksel op de pan gaar.
5 Boen de citroen schoon, rasp de gele schil van de vrucht en snijd in 8 partjes. Snijd de peterselie fijn.
6 Roer het citroenrasp en ⅔ van de peterselie door de rijst. Breek de zalm in grove stukken, leg op de rijst en verwarm nog 3-4 min. met de deksel op de pan.
7 Bestrooi met de fijngesneden peterselie en peper en verdeel de citroenpartjes erover.
