The Biological "Nitrosamine Square"
Where a fire creates destructive energy, this biological process creates destructive carcinogens. To form the dangerous Nitrosamines, the following molecules/elements must meet:
Nitrate/Nitrite (NO3/NO2): Equivalent to Oxygen. It is the oxidizing agent that sets the process in motion.
It comes from both drinking water, vegetables and your own production in the saliva.
Amines/Amides: Similar to the fuel. These are found naturally in proteins (meat, fish, etc.). When they encounter nitrites, they have the potential to turn into nitrosamines.
Low pH (Stomach Acid): Corresponds to Heat. The acidic stomach acid acts as the catalyst,
that provides the "energy" for nitrite and amines to react with each other.
The Chemical Chain Reaction: This is the actual formation of free radicals and nitrosamines that attack the cells' DNA.

1. The body as a "nitrate factory"
The report states through balance experiments with pigs that a net synthesis of nitrate (NO3) occurs in the organism.
Animals fed low nitrate diets excreted between 200-700 µmol more nitrate per day than they ingested.
This proved that nitrate is a naturally occurring substance in the body, regardless of what one eats.
+1
2. The hidden role of the microflora (Without vitamin C)
The research investigated how bacteria in the digestive system affect nitrate levels by using antibiotics (nebacitin) to reduce microbial activity.
Found: When the microflora was reduced, the excretion of nitrate in the manure increased by 20-100%.
The interpretation: This indicates,
that a natural microflora normally "uses" or converts the nitrate in the intestine.
3. The "old" fear: Nitrosamines
The report explicitly mentions that the interest in the subject is due to the fear of N-nitroso compounds (nitrosamines), which were supposed to be formed in the stomach, bladder and intestine.
Back then it was known that the formation required nitrite,
secondary amines and bacteria.
However, the solution with vitamin C (ascorbic acid) had not yet been integrated as a fixed part of the biochemical equation in these specific experiments.
The connection with your thesis
The report ends with a remark that supports your point about the "scientific roar": Now that it was known that the body itself produces nitrate,
this discovery should have changed the whole discussion about the use of nitrite and nitrate in the food industry as early as 1980.
As your previous graphic shows, it is precisely vitamin C (ascorbic acid) that today fills the void left by researchers in 1980. Where in the report they focus on the fact that nitrate/nitrite can turn into dangerous nitrosamines, we now know that C
-the vitamin acts as an antagonist, forcing the process into the healthy NO-gas route instead.

takes more iterations than the one before.
Rare Deep Dream: is any dream which went deeper than level 6.
