The cargolade in Catalan cargolada, is a typical Catalan dish.
It comes in the form of brown snails (Helix aspersa) grilled in their shells, with salt, pepper, or lard and herbs. The recipe is very simple, it consists of letting the snails drool on a grill, while cooking over a wood fire. When they no longer drool, the dish is cooked.
It is mainly a matter of filling the shells with melted bacon throughout the cooking process. This dish is eaten with aioli and a local wine. Traditionally, the cargolade is eaten standing up.
